Gaby's Bakery - Coconut Yoghurt

At our recent trip to RAKxa Medispa in Thailand I was really taken by the whole food offering. This recipe was for their coconut yoghurt which goes perfectly in a healthy breakfast of seeds, grains and berries.

Coconut Yoghurt

Ingredients:
400g organic canned coconut milk
20g lemon juice
7g apple cider vinegar
1 tsp agar agar

Optional – a couple of drops of liquid probiotic

Method:
Slowly bring the coconut milk and agar agar to boil, then turn down and simmer, stirring continuously until all is dissolved. Allow to cool then whisk together with the lemon, vinegar and probiotic. 

Transfer to a glass bowl, lightly cover and place in the fridge to fully set.
