Here's a bit of fun for Christmas which the kids will love having a go with. You'll need the cookie cutters, but they come in all shapes, sizes and designs nowadays.
Ingredients:
340g plain flour
160g light brown sugar
100g unsalted butter
3 tbsp ground ginger
4 tbsp golden syrup
1 tsp bicarbonate soda
1 egg
For gluten free version, use gluten free flour and add ¼tsp of xantham gum.
Icing:
150g Icing sugar
1 egg white
A few drops of vanilla extract
Method:
Preheat oven to 180⁰c, line 2 baking trays with parchment paper.
Cream the butter and sugar together, add the egg and beat in. Then add all the other ingredients mixing until a smooth dough forms. Roll dough out onto a floured work surface until dough is appx 3mm thick.
Cut out the shape of the house using a cookie cutter. You will need two 2 fronts, 2 sides and 2 roofs per biscuit. Space each piece out on the baking tray. Place biscuits in the oven and bake for appx 6-8 mins. They will be firm to touch and slightly darker when ready.
Place on a wire rack to cool, (they will harden once cooled). Once fully cooled,
Icing:
Whisk the egg white on medium speed until it becomes foamy, then add the icing sugar and vanilla. Beat on high until stiff shiny peaks form. You will need a small piping bag and nozzle to decorate.
Use the icing on the edges of each side of the 6 biscuits to stick the house together, allow to set and then decorate.
