Smokey, treacly, crispy, chewy, nutty. This dangerously delicious indulgent blend of golden, buttery caramel, toasted pecans and delicate, crisp quinoa, is finished with a sprinkle of sea salt. Wonderfully crunchy, rich and nutty, with the perfect balance of sweet and savoury, this irresistible brittle delivers a satisfying snap and a lingering caramel sweetness in every bite.
Ingredients:
165g pecans (finely chopped)
60ml maple syrup
60ml honey
45g quinoa
35g dark brown sugar
30g butter
15g sesame seeds
1 tbsp coconut oil
2 tsp vanilla extract
½ tsp salt Sea salt to scatter
Method:
Preheat oven to 150⁰C (fan). Line a baking sheet (13 x 18”) with foil and generously grease the foil with cooking spray / melted butter / oil.

Rinse the quinoa in a fine strainer and leave to drain. Use kitchen paper to absorb the excess water. Chop the pecans either by hand or in a processor. They should be finely chopped but not a powder.

In a large bowl place the maple syrup, honey, sugar, butter, coconut oil, vanilla and salt. Heat in the microwave for a minute so butter and coconut oil are melted, stir well to mix all ingredients. Add the pecans, quinoa and sesame seeds and stir again to combine all ingredients. Tip onto the baking sheet and pat out into a thin, even layer. It will spread slightly while cooking.

Bake for 15 mins, then turn the baking tray round and bake for another 10-12 mins, checking to make sure it doesn’t burn. It should be a deep golden colour all over. Take out and sprinkle the top with sea salt flakes. Allow to fully cool on the tray before you break up into pieces.

Enjoy.

This bánh flan or Vietnamese crème caramel is similar in texture to an Italian panna cotta, though crème caramel is made without gelatin or starches, as the eggs thicken the mixture themselves giving you a perfect velvety texture, that's smooth and compact.
