'Use your loaf' is another of those colloquial British expressions which the younger generations aren't adopting much and will probably die out. It comes from the cockney rhyming slang of 'loaf of bread" for head thence brain. On a dim wet Saturday afternoon, with a random excess of ingredients I decided to use my own 'loaf' to cobble together a recipe. My son James, said it was his best-ever cake and the next three disappeared very swiftly from the salon Deli. Try this yourself.
Ingredients:
190g unsalted butter
190g sugar
190g self-raising flour
3 eggs
2 large apples – peeled, cored and chopped
Optional – brown sugar & cinnamon to sprinkle
Method:
Preheat oven to 160c (fan). Line a 2lb loaf tin.

Beat butter and sugar together until light and fluffy, add the eggs one at the time, beating in between each. Add the vanilla, beat in. Fold in the flour, then fold in the apple, leaving some out to sprinkle on top.

Pour batter into the prepared tin. Sprinkle the remaining apple, a little brown sugar and cinnamon over the top. Bake for appx 60 mins, until golden on top and a skewer inserted into the centre comes out clean. Take out the oven and allow to cool on a wire rack.
