Gaby's Bakery - Nanaimo Bars

A Nanaimo bar is a rich no-bake dessert bar from Canada, named after the city of Nanaimo in British Columbia. It’s famous for having three indulgent layers and requiring no oven.

The texture is the magic with a base that has crumb, chew, and crunch from biscuit, coconut, and nuts. The middle is silky and soft. The top is smooth chocolate that gently cracks when you bite it. 

Nanaimo Bars

Ingredients:
For the Bottom Layer:
200g graham crackers (crushed)
115g unsalted butter
80g desiccated coconut
60g walnuts (chopped)
50g sugar
30g cocoa powder
1 egg

For the Custard Layer:
240g icing sugar
115g butter (room temp)
40ml single cream
30g custard powder

For the Chocolate Layer:
115g dark (54%) chocolate
30g butter

Method:

Grease and line an 8x8” cake tin.

For the Bottom Layer:
In a small saucepan melt the butter, sugar and cocoa powder until all incorporated, then take off the heat and stir in the egg. In a large bowl mix the graham cracker crumbs, coconut and nuts, then pour the butter mixture over and mix. Transfer this into the prepared tin and press down. Place this in the fridge to chill.

For the Custard Layer:
Beat the butter until smooth, then add the icing sugar and custard powder and beat again. Add the milk gradually, beating until you have a creamy consistency. Spread this over the base layer. Place back in the fridge to chill.

For the Chocolate Layer:
Gently melt the chocolate and butter until all mixed together, then spread this over the custard layer. Chill again, then cut into desired square sizes.
