Gaby's Bakery - Banana & Oat Choc Chunk Cookies

Golden at the edges, deliciously soft and chewy at the heart, this hits that sweet spot between comfort food and something that feels almost wholesome. Ripe banana brings a rich, natural sweetness, while oats give every bite a wonderfully satisfying, nutty chew. Generous pieces of chocolate melt into the cookie as it bakes, creating little pockets of indulgence against the warm, caramelised banana.

Moreish and just wholesome enough to feel virtuous — part banana bread, part chocolate cookie, and rather difficult to resist.

Banana & Oat, Choc Chunk Cookies

Ingredients:
160g plain flour
115g unsalted butter
110g light brown sugar
100g dark chocolate chunks
80g oats
50g granulated sugar
1 large overripe banana (mashed)
½ tsp vanilla extract
½ tsp salt
½ tsp bicarbonate of soda

Method:
Prepare 2 baking trays with parchment paper.

Brown the butter in a small nonstick saucepan until a dense golden foam appears. Cool the butter, then pour into a large bowl. Add the sugars and then beat gently until you have a fluffy consistency. Beat in the mashed banana and vanilla, then add the flour, oats, bicarb and salt. Fold in and then add the chocolate chunks. Mix to incorporate.

Use an ice cream scoop of desired size to portion each cookie leaving space between each as they will spread when baked. Once all the cookie dough is used up place the baking trays in the fridge and chill for 30 mins.

Preheat oven to 170c and bake cookies for appx 10-12 mins depending on size.  They will be golden around the edges, and the centre will still be a little soft when ready. Take out the oven and allow to cool on a wire rack.
