Za’atar crackers are crisp, savoury crackers flavoured with za’atar, the wonderfully aromatic Middle Eastern seasoning blend. They have a distinctive combination of herby, nutty, citrusy and slightly earthy flavours and are particularly good when you want something more interesting than a plain cracker.
Za’atar varies by region and recipe, but often combines dried thyme or wild oregano, toasted sesame seeds, sumac and salt.
The cracker itself is often quite simple—flour, olive oil, water and salt—so the za’atar remains the star. Olive oil gives them a lovely richness and helps them bake to a delicate, crisp, almost flaky texture.
They're excellent with hummus, labneh, whipped feta, baba ganoush or muhammara. They also pair well with olives and cheeses, or can simply be eaten on their own as a snack.
Ingredients:
100g plain flour
60ml olive oil
60ml water
30g sesame seeds
20g black sesame seeds
12g za’atar
1 tsp baking powder
½ tsp salt
¼ tsp chilli flakes
Method:
In a large bowl mix the flour, olive oil, sesame seeds, za’atar, baking powder, salt & chilli flakes.

Add the water and mix until the ingredients con together to form a pliable dough, (add flour if the dough is a little sticky). Leave the dough for 10 mins to allow the oil & water to be absorbed.
Preheat oven to 175c.
Place the dough on a large piece of parchment paper, laying another piece on top, and roll out to 1/8-inch thickness. Transfer to a large baking tray, uncover the dough and cut into desired sized / shaped crackers.

Bake for appx 15 mins until crackers are golden. Remove from the oven and allow to cool before transferring to a wire rack to fully cool.
