A luxuriously creamy, high-protein frozen dessert with the nostalgic flavour of chocolate chip cookie dough—rich vanilla, and generous chocolate chunks, all with a silky cottage cheese base. Cottage cheese has become popular in frozen desserts because it blends into a creamy base while providing significantly more protein than conventional ice cream.
Ingredients:
For the cookie dough bites:
60g almond flour
30g almond butter
30g honey
30g cookies & cream or vanilla protein powder
20g chocolate chips (plus a little extra to garnish)
For the cookie dough ice cream:
300g full fat cottage cheese
30g cookies & cream or vanilla protein powder
30g almond butter
30ml almond milk
30 ml maple syrup
1 tsp vanilla extract
Pinch of sea salt
Method:
For the cookie dough bites:
Mix all the ingredients together until a thick dough forms. Roll into balls and then refrigerate.

For the cookie dough ice cream:
Place all the ingredients in a food processor and blend until you have a smooth, creamy consistency.

If you have small dough bites, drop these into the ice cream, otherwise cut up some of the larger balls. Mix these into the ice cream, transfer to a freezer proof container and freeze for 3-4 hours.

Allow the ice cream to thaw for 10mins before serving. Scatter some of the dough bites and chocolate chips over the ice cream to serve.
