Gaby's Bakery - Chocolate Chip Muffins

Easy to make and when they’re baking, the whole house smells like happiness. These treats are basically the best of all worlds - rich cocoa muffin + chocolate chips = serious comfort, like a hug, but edible. 

Not quite breakfast, not quite cake, they're indulgent but like you’ve treated yourself without going full dessert, so you can justify them at 9am or 9pm, if you need to! And the little bursts of molten chocolate in every bite feel unfairly good.  

Chocolate Chip Muffins

Ingredients: (makes 6 muffins)
150g chocolate chips
105g plain flour
100g sugar
85g plain Greek yoghurt / sour cream
60ml milk 60ml vegetable / sunflower oil
30g unsweetened cocoa powder
1 egg
1 tsp vanilla extract
¾ tsp baking powder
½ tsp bicarbonate of soda
½ tsp salt

Method:
Preheat oven to 200c. Line a 6 hole muffin tray with liners.

In a large bowl sift together the flour, cocoa powder, baking powder, bicarb of soda and add the salt.

In another large bowl whisk together the egg, sugar and oil, then add the vanilla and, milk and beat until all is incorporated.

Fold the dry ingredients into the wet, add the yoghurt and beat until everything is only just mixed and smooth. Leave 1/4 of the choc chips aside and mix the remaining 3/4’s into the batter.

Divide the mixture between the 6 muffin cases, scatter the remaining choc chips on top.

Place in the oven and bake for 8 mins, then turn the temp down to 160c and bake for another 10-12 mins, until a skewer inserted comes out clean.

Remove from the oven and allow to cool on a wire rack.
