Gaby's Bakery - Cocadas

WARNING: Seriously moreish - immense self-discipline needed. These traditional coconut delicacies are found in much of Latin America and Europe. 

Cocadas

Ingredients:
275g coconut flakes
80g sweetened condensed milk
75g Macadamia nuts
1 egg
½ tsp vanilla extract

Method:
Preheat oven to 160c (fan), grease a 24-hole mini muffin tray or line a baking tray with parchment paper.

Lightly beat the egg. Place all the ingredients in a large bowl and mix together using a large spoon or spatula.

Either drop a spoonful of the mixture into the prepared muffin tray, or use a small ice cream scoop to form into small balls and place on the lined baking tray.

Bake for appx 18 mins. Take out the oven, allow to cool slightly and then transfer to a wire rack.
