Gaby's Bakery - Cranberry Oat Bars (Gluten & Dairy Free)

This simple bar feels both grounding and gently energising. A flavour contrast of comforting oats, lifted by the bright, slightly tart pop of cranberries, keeps every bite interesting. 

Cranberry Oat Bars - (Gluten & Dairy Free)

Ingredients:
180g rolled oats
120ml almond milk (any dairy free option)
100g sugar
70g dried cranberries
2 eggs (lightly beaten)
1 ripe banana (mashed)
1½ tsp baking powder
1 tsp vanilla extract
½ tsp cinnamon
½ tsp salt

Method:
In a large bowl combine the oats, sugar, baking powder, cinnamon & salt. In another bowl mash the banana, then add the eggs, milk & vanilla.

Pour the wet ingredients over the dry, mix together and then leave to sit for 20 mins, (the oats will start soaking).

Preheat oven to 170c. Line an 8x8” baking tray with parchment paper.

Fold the cranberries into the mixture and then pour into the prepared tray. Bake for appx 30 mins until the edges are golden brown and its firm to touch. Take out the oven and allow to cool on a wire rack. Cut into desired bar sizes.
