Gaby's Bakery - Chiji’s Cornflake & Cherry Biscuits

This recipe comes from an Indian friend who called her Grandmother Chiji. It's a term of endearment and this is a family favourite passed down through the generations.

Chiji’s Cornflake & Cherry Biscuits

Ingredients:
300g self-raising flour
170g unsalted butter (room temp)
140g sugar
50g crushed cornflakes
30g glace cherries (halved or quartered)
1 egg

Method:
Preheat oven to 180c. Line 2 baking trays with parchment paper.

In a large bowl beat the butter and sugar until light and fluffy, then beat in the egg. Fold in the flour. Take small portions of dough and roll into balls, then roll the balls in the cornflakes.

Place these on the baking tray leaving space between each. Put a piece of cherry in the centre on top and flatten slightly.

Bake for appx 15-18 mins, depending on the size of the biscuit, until golden brown. Take out the oven and allow to cool on a wire rack.
