Gaby's Bakery - Peanut Butter & Oat Protein Bites

Like healthy protein balls but in a flat tray, this no-bake recipe is topped off with delicious chocolate and sea salt. You'll struggle to stop at one.

Gaby's Bakery - Peanut Butter & Oat Protein Bites

Ingredients:
280g peanut butter
210g pitted dates
100g oats
85g dark chocolate (54%)
1 tbsp water
1 tbsp chia seeds
1 tbsp flax seeds
1 tsp vanilla extract

½ tsp coconut oil
Sea salt to sprinkle

Method:
Line an 8x8” baking tray with parchment paper.

In a food processor blitz the peanut butter, dates, chia seeds, flax seeds, vanilla and water until smooth.

Add the oats and blitz again until all is combined.

Tip this into the prepared tray and press firmly down so you have an even layer. Place this in the fridge.

Slowly melt the chocolate and coconut oil in the microwave and then pour this over the peanut and oat bar making sure it is evenly spread. Sprinkle sea salt over the top and then place in the fridge for a few hours to fully set. Cut into desired bite size pieces.
