Gaby's Bakery - Christmas Rocky Road

Mash up molten chocolate, nuts, biscuit and marshmallow and voila, Rocky Road. An easy peasy no-bake traybake loved by kids and adults and themed into a popular version of ice cream.

Christmas Rocky Road


Ingredients:
600g milk chocolate
150g digestive biscuits
150g maltesers
100g mini marshmallows
100g cranberries
50g cornflakes
Icing sugar to dust
Optional – decorations of choice

Method:
Grease and line two 26 x 16cm baking trays.

Break the chocolate up into small pieces and melt gently in a bain marie.

Place the digestives in a freezer bag and bash them with a rolling pin, you want some small pieces as well as little crumbs. Cut the maltesers in half. Place the biscuits and maltesers in a large bowl along with the marshmallows, cranberries and cornflakes. Mix them all together.

Once the chocolate has melted pour it over the dry ingredients and gently mix through so that everything is coated.

Tip this into the prepared tray/s smoothing it down and place in the fridge for a few hours to set.

Once ready cut into pieces, sprinkle with icing sugar and decorate as desired.
