Gaby's Bakery - Rice Crispy Treats

Lockdown 3: home schooling six-year-old twins and training a new puppy. No time to waste. Here’s a very quick and simple recipe, with very few ingredients, that doesn't need an oven. A healthy indulgence.

Rice Crispy Treats

Ingredients:
100gms organic puffed rice cereal (or Rice Krispies)
80gms almond butter
90gms maple syrup
1 tbsp coconut oil

Method:
Prepare an 8-inch baking tray by greasing and lining with parchment paper.

Melt the almond butter, maple syrup and coconut oil over a low heat until it all comes together, (don’t overheat). You may need to whisk it during this process. Once mixed, take off the heat and fold the puffed rice in until well incorporated. Turn out into the prepared tray and pack it down using the back of a large spoon.

Place in the freezer for an hour to set. Take out and cut into desired squares, rectangles, bite size pieces.
