Gaby's Bakery - Cashew & Date Naked Bars

These no-bake, guilt-free, vegan and gluten-free energy bars provide lots of fibre, protein, and healthy fats. Using just two ingredients, they're simple to make and provide the whole family with a sweet healthy boost when energy is flagging.

Cashew & Date Naked Bars

Ingredients:
375g cashew nuts
360g soft dates (no stones)

Method:
Grease and line a 26 x 16cm baking tray.

In a food processor blitz the cashew nuts, then add the dates and blitz again until everything is combined and you have a smooth, sticky mixture.

Tip this into the prepared tin and press down until you have a smooth even layer.

Place in the fridge for an hour, then take out and cut into desired bar sizes. Keep refrigerated to store.
