Gaby's Bakery - Frozen Raspberry & Chocolate Bars

Frozen raspberries covered in dark chocolate are a delicious, refreshing treat that combines sweet-tart fruitiness with rich, bittersweet cocoa. They're popular as a healthy-ish indulgence or an elegant snack, and they're incredibly easy to make.

Raspberries are high in fibre, vitamin C, and antioxidants. Dark chocolate (especially 70%+) contains flavonoids, which may support heart health.

Frozen Raspberry & Chocolate Bars

Ingredients:
225g frozen raspberries
150g dark chocolate (54%)
125g desiccated coconut (keep a little aside to sprinkle on top of chocolate)
45g honey
5g coconut oil

Method:
Line a baking tray or silicon moulds with parchment paper.

In a food processor blitz the raspberries, coconut and honey until ingredients are well combined. Transfer this to the prepared tray/moulds. Freeze for a few hours or overnight.

Melt the chocolate and coconut oil in a bain-marie, transfer to a shallow bowl.

If raspberries were frozen in a tray cut into desired sizes. Dip each bar into the chocolate, let excess chocolate drip off and then lay on a piece of parchment paper. Top with a sprinkle of desiccated coconut and place back in the freezer. Keep stored in the freezer.
