Here's a virtuous medley of superfoods all mixed into one bake. A symphony of tastes and textures erupt as you bite into this energy boosting health bar. Sweet, chewy and firm with a soft little pop from the quinoa and chia seeds that roll around the palette. Oh, it's super quick and easy too.
Ingredients:
160g bananas
90g oats
90g quinoa (rinsed & uncooked)
60g almond butter
60g raisins
35g chopped almonds
35g chopped pecans
30g maple syrup
2 tbsp chia seeds
1 tsp ground cinnamon
½ tsp vanilla extract
Pinch of salt
Method:
Preheat oven to 170c. Grease and line an 8x8” baking tray.
In a large bowl mix the oats, quinoa, chia seeds, cinnamon and salt. Chop the nuts then add these with the raisins. In another bowl mash the bananas with the vanilla, then add this to the dry ingredients and mix until all is combined.
Slowly heat the almond butter and maple syrup until melted, then add this to the banana mixture. Make sure all is combined, then transfer to the baking tray and press down to even out the surface. Place in the oven and bake for appx 25 mins, until slightly browned around the edges.
Once ready take out the oven and allow to cool completely on a wire rack, then cut into desired size.
