Gaby's Bakery - Nutty Date & Chocolate Roll

This  no-bake, nutty date and chocolate roll invites a kind of slow indulgence—earthy, rich, and quietly decadent. A tender spiral of caramel-soft dates and nuts, is wrapped in a velvet ribbon of dark chocolate then sprinkled with sesame seeds.

Each slice offers a gentle chew, a whisper of sweetness, and a deep, lingering richness that feels both comforting and indulgent.

Nutty Date & Chocolate Roll

Ingredients
85g chocolate chips (dark 54%)
50g flaked almonds
40g desiccated coconut
30g sesame seeds
16 pitted soft dates sliced open
Neutral oil spray



Method

Cut two large pieces of parchment paper. Place one piece on your work surface and
spray with a neutral oil.

Lay your open dates out on the oiled parchment paper in a row of four and a column of four. Spray neutral oil over the dates and then place the second piece of parchment paper on top. Use a rolling pin to flatten the dates until you have a thin like sheet. Melt the chocolate and spread this evenly over the dates, then sprinkle the coconut and almonds over the chocolate layer.

Using the parchment paper to help, roll up the dates into a tight log. Place on a flat tray or board and place in the freezer for appx 6 hours or overnight.

Take out the freezer and roll the log in sesame seeds. Slice into desired pieces.
