Gaby's Bakery - Oat Cookie

I've been writing about our visit to the Rakxa Medispa in Thailand and I will delve deeper into the amazing dining there in later issues, but essentially, eat more delicious food and get leaner! I picked up some recipes. This cookie looks simple but tastes delicious and is pretty healthy for a biscuit.

Oat Cookie 

Ingredients:
300g gluten free oats
100g light brown sugar
90ml sunflower oil
60g chopped cashew nuts
30g raisins
2 eggs
½ tsp baking powder
½ tsp salt

Method:
Preheat oven to 160 c. Line two trays with parchment paper.

Beat the eggs and sugar in a large bowl. Add the oats, baking powder and salt, mix well. Slowly pour in the oil while beating. Add the raisins and nuts, mix in.

Using an ice cream scoop or piping bag, scoop or pipe out the mixture leaving a little space between each. Lightly press down each cookie with a fork.

Bake for appx 10-12 mins depending on size of cookies. Cookies are ready once slightly golden and firm. Take out the oven allow to cool a few mins and then transfer to a wire rack to fully cool.
