Gaby's Bakery - Pandesal (Filipino roll)

Pandesal (or pan de sal) are iconic Filipino yeast-raised bread rolls, often known as the "bread of salt" despite their slightly sweet, soft and fluffy texture. Recognised by their pale, breadcrumb-coated crust, they are a staple breakfast item, bought fresh from bakeries, traditionally served warm, often dipped in coffee or filled with meat, cheese, or jams. 

Pandesal (Filipino roll)

Ingredients:
400g plain flour
230ml lukewarm milk
50g sugar
40g breadcrumbs
30g melted unsalted butter
7g instant / quick yeast
1 egg
1 tsp salt

Method:
Line a baking tray with parchment paper.

In a large bowl place all the ingredients except the breadcrumbs. Mix the ingredients and knead either in an electric mixer with the dough hook or by hand. This will take 5-10 mins, until the dough is smooth and elastic.

Place the dough in an oiled bowl, cover and allow to prove / double in size for appx 1.5 hours.

Once the dough is ready tip it onto your work surface and divide it into 12 equal pieces. Roll each piece into a ball, cover it in breadcrumbs and place on the prepared tray. Repeat this with all 12 pieces making sure to leave about an inch on all sides between each roll. Cover again and allow to rise for 45mins. Preheat oven to 180c.

Bake the rolls for appx 12-15 mins until lightly golden. Take out the oven, allow to cool slightly and enjoy them while they are still warm.
