Gaby's Bakery - Peanut Butter Chocolate Chunk Cookies

Peanut butter is one of those rare foods that sits between comfort and nutrition. At its core, it’s just ground peanuts—but what it delivers goes far beyond. The pure version here is just roasted peanuts ground into a paste with a little salt. It's rich in nutrients and energy which makes it brilliant in moderation. Commercial versions often add sugar and palm oil.

Peanut Butter Chocolate Chunk Cookies

Ingredients:
200g peanut butter (smooth or crunchy)
140g sugar
130g dark chocolate chunks
125g plain flour
80g unsalted butter (softened)
1 egg
½ tsp bicarbonate of soda
¼ tsp salt

Method:
Line a large baking tray with parchment paper.

Beat the butter and sugar, then add the egg, beat again, then the peanut butter. Once everything is mixed, add the flour, bicarb of soda and salt. Mix again until you have a cookie dough, then mix in the chocolate chunks.

Use a medium sized ice cream scoop to scoop golf ball sized dough balls onto the prepared baking tray, leaving space between each as they will spread a little when cooked. Place in the fridge for appx 30 mins.

Preheat oven to 180c and bake cookies for appx 12 mins until edges are golden.

Take out the oven and leave to cool for a few mins on the tray, then transfer to a wire rack to fully cool.
